Crab & Shrimp Casserole from www.recipezaar #15643

 

Recipe Makes for 10 – 12 People

2 lbs Cooked Crabmeat (I use canned or frozen)

2 lbs Cooked Shrimp (I use frozen, full size but remove tails)

˝ - 1 Cup Butter

˝ Cup Flour

8 Oz. Cheese Wiz

3 Cups Milk (I use skimmed Milk)

2 Tables Sherry Wine (I go heavy here – some goes in the recipe)

1 Package Ritz Cracker

2 Tablespoon Butter, melted)

1 Tablespoon Paprika

 

Optional

Red or Green pepper chopped in small squares)

Hot Pepper chopped in very small squares

˝ Tablespoon Old Bay (when having people from Maryland)

 

 

Melt stick butter over low heat, add flour & stir till well blended

Remove from heat & stir in milk & return to heat

Cook stirring until thick & smooth

Stir in cheese & sherry & remove from heat

Fold in Crab & shrimp & pour into buttered Casserole dish*

Crush crackers over top of casserole & add paprika

Bake at 350 degrees (30 min) until crumbs are browned & casserole is bubbly

bulletI use ˝ the recipe & put into individual casserole dishes. If only for two of us, I freeze the two (without crumbs) for later use.

                              

Alice Thecker’s Thanksgiving Salad

(Cranberry-Pineapple Mold)

 

Serves 10 – 12

 

2 pkg (small) strawberry Jell-O

1 Cup Boiling water

1 Cup crushed pineapple (drained)

1 can whole berry cranberry sauce

1 – 8oz pkg cream cheese

1 cup chopped walnuts

 

Mix jello & hot water ‘til dissolved

Add drained pineapple & cranberry sauce

Put ˝ of mixture into oiled mold

Refrigerate ‘til set

Mix cream cheese with a little pineapple juice ‘til spread able

Spread cream cheese on set Jell-O

Spread nuts on cream cheese & press down gently

Pour other half of Jell-O mixture on top

Refrigerate ‘til set

                              

Baked Beans w/Sausage

 

2 Large (28 Oz.) Cans Bush’s Baked Beans

1 Pkg. Hot or Medium Sausage (Turkey Sausage OK)

Bermuda Onion (Med)

2 Cloves Garlic

1 Med. Pepper (Green, Yellow, or Red)

1/3 Cup Barbeque sauce

1 Granny Smith Apple

1/3 Cup Raisins

1/3 Cup Brown sugar or maple syrup to taste

 

Slice sausage in thin slices put in frying pan. Add ˝ Bermuda onion chopped medium and clove garlic chopped fine and brown. In large casserole dish add 2 large cans Bush’s Barbeque baked beans, 1 med. Pepper chopped medium, 1/3 cup barbeque sauce, clove garlic and sausage mixture and  bake 1 hour at 375°. The add 1 Granny Smith Apple chopped and 1/3 Cup raisins and cook about 30 minutes. Add raw chopped Bermuda Onion on top to serve. Serve 10 to 14.

I usually cook these beans in a slow cooker for whatever time is available, and serve from the crock pot
